I'm using Thunderbird with GMail. It downloads *all* messages not 
previously downloaded (and all messages once downloaded, are archived). 
It even downloads messages *I* send thru the webmail.

To answer the original question, the only you can avoid downloading read 
mails is by moving them to Trash.
